What you’ll need

Serves 2

  • 2 x large chicken fillets
  • 400g tinned chopped tomatoes
  • Half red chilli, deseeded
  • 1 tsp fresh basil, chopped
  • 1 tbsp balsamic vinegar
  • 150g green beans

The easy bit

  1. Grill chicken fillets for approx 25 minutes, turning half way through cooking
  2. Meanwhile, place chopped tomatoes in a pan, add finely chopped chilli, basil and balsamic vinegar then lower the heat and simmer until the liquid is reduced.
  3. Serve the grilled chicken with the hot tomato salsa and cooked green beans.
