What you’ll need
Serves 2
- 2 x large chicken fillets
- 400g tinned chopped tomatoes
- Half red chilli, deseeded
- 1 tsp fresh basil, chopped
- 1 tbsp balsamic vinegar
- 150g green beans
The easy bit
- Grill chicken fillets for approx 25 minutes, turning half way through cooking
- Meanwhile, place chopped tomatoes in a pan, add finely chopped chilli, basil and balsamic vinegar then lower the heat and simmer until the liquid is reduced.
- Serve the grilled chicken with the hot tomato salsa and cooked green beans.
