  • 110g Celebrity Slim Vanilla Shake
  • 120g plain flour
  • 60g gluten-free self-raising flour
  • 1 teaspoon cinnamon
  • 150g brown sugar
  • 200g cups coarsely grated carrot
  • 2 Eggs
  • 125ml vegetable oil
  • Pinch of salt

For the Greek yoghurt icing:

  • 250g Greek yoghurt
  • 100g icing sugar
  • 1 teaspoon vanilla extract
  1. Preheat oven to 180°C. Grease an 18cm x 28cm baking tin and line with baking paper.
  2. Mix the Celebrity Slim vanilla shake, flour, cinnamon, and sugar in a large bowl, stirring to combine. Add the carrot, egg, salt and oil and stir until just combined.
  3. Spoon the mixture into the baking tin. Bake 25-30 minutes or until a toothpick inserted into the cake comes out clean. Set aside in the pan to cool.
  4. To make the icing, add the Greek yoghurt, icing sugar and vanilla extract in a small bowl. Stir to combine.
  5. Transfer the cake to a board. Spread the top of the cake with icing. Cut into pieces and enjoy!
